Sorbetto Apurimac Perù 72% Domori

a refined, high-end sorbet recipe

The Sorbetto Apurimac Perù 72% Domori is a refined, high-end sorbet recipe that marries the purity of premium single-origin chocolate with the clarity and freshness of an artisanal frozen dessert. Central to the preparation is the Apurimac Peru 72% dark chocolate from Domori — a couverture crafted from cocoa beans grown in the Apurimac valley of southern Peru, known for its aromatic intensity and nuanced profile that brings spicy, creamy and subtly citrus-tinged notes to the palate.

Presented at a basic skill level, the recipe guides professional gelato makers through a sorbet process that highlights the chocolate’s depth without overwriting it with dairy or competing flavours. The method begins with a blend of neutral stabilisers and sweeteners (including sucrose and fibre mix) dissolved in hot water, into which the finely chopped Apurimac chocolate is incorporated. After a period of rest — key for allowing the ingredients to harmonise — the mixture is churned and frozen to achieve a clean, refreshing sorbet that’s both intensely chocolate-driven and refreshingly light.

This sorbet exemplifies how chocolate — especially from a distinguished origin like Apurimac — can be reinterpreted beyond traditional gelato and into the realm of pure, elegant frozen simplicity, letting complex cocoa characteristics shine against a backdrop of pristine texture and balance.
